Tomorrow, March 1st, we celebrate St. David’s Day, a moment to appreciate the rich heritage of Wales. St. David, or Dewi Sant, a 6th-century Welsh bishop, is the patron saint of Wales, and his emphasis on simple living and devotion has inspired generations. This day is a celebration of Welsh tradition, with a focus on history, community, and, of course, delicious food.

A Classic Welsh Dish: Cawl Recipe

Cawl is a traditional Welsh broth, perfect for a hearty and comforting meal. Here is a version of the recipe:

Ingredients:

1kg Welsh lamb, cut into chunks

Two large leeks, sliced

2 carrots, diced

2 potatoes, diced

1 turnip, diced (optional)

1 onion, chopped

2 liters beef or lamb stock

Fresh parsley, chopped

Salt and pepper to taste

Instructions:

In a large pot, brown the lamb chunks.

Then, add the onion, leeks, carrots, potatoes, and turnip (if using).

Pour in the stock and bring to a boil.

Reduce heat and simmer for 1.5-2 hours, or until the lamb is tender.

Season with salt and pepper to taste.

Garnish with fresh parsley before serving.
