A Bratt Pan is a large, tilting pan with a stainless steel or cast-iron flat griddle plate at the bottom. The sidewalls have a front pouring lip & there is a hinged, stainless-steel cover. The tilt mechanism (manual or electric) is one of the most valuable features of the Bratt Pan as it allows the user to empty the contents safely and quickly, and makes cleaning easier too. Some models, e.g. the Falcon F900 G9881/N come equipped with an integrated water faucet for ease of filling and cleaning and a counter-balanced lid with incremental opening that helps to retain heat in the pan whilst monitoring the cooking process.
Bratt Pans are incredibly versatile, used to cook large quantities of food at once. They can perform multiple functions such as boiling, stewing, steaming, simmering, roasting, poaching, shallow and deep frying. They can also be used for multifunction cooking of one product, such as browning off meat with the pan set at a fry temperature with the lid open, then the liquid is added, the temperature lowered, and the lid closed to braise softly.
Both gas and electric models are available. Gas Bratt Pans heat up faster than electric ones, but electric models can be used in more kitchens. Both are very energy-efficient offering good insulation due to their high-quality stainless-steel/cast iron construction.
