What is a blast chiller, and do I need one?
Food safety is one of the most important reasons to get a blast chiller. A commercial blast chiller keeps your products at a safe temperature for longer periods than other methods such as freezers or refrigerators. These units can quickly cool large amounts of food and keep it at the correct temperature before being served or stored overnight.
Additionally, a blast chiller prevents the loss of moisture that can occur when foods are cooled slowly. Food that keeps its moisture will taste better and fresher when reheated and served. Blast chilling also reduces the opportunity for bacterial growth which will degrade food quality and compromise food safety. They achieve this using powerful compressors that rapidly reduce the internal temperature inside the unit.
This rapid freezing process, creates small frozen crystals inside the food, passing a constant flow of chilled air over the food speeds up the cooling process. Most units freeze foods in four hours or less, depending on food density.
Selecting the size of unit, you need is crucial. Large operations doing a lot of cooking or baking might consider a walk-in blast chiller. For those commercial kitchens who do not have the space for a walk-in, a freestanding blast chiller would suit. Like free-standing fridges & freezers, they come in a variety of sizes and capacities.
For the smaller scale business, a countertop or undercounter blast chiller may be best. Ideal for kitchens with limited space.
