There is never enough space in a kitchen for storage, unlike meat or fresh produce stored in refrigeration cabinets, dry goods need to be stored where they are out of the way and yet near at hand when needed. The right shelving or racking is key in the commercial kitchen.
The most common for dry storage are tiered, wire racking units made of a variety of materials to suit the type of products to be stored:
Stainless steel is commonly used because it is versatile, durable, and non-porous. It also prevents the threat of contamination more than other metals or materials as is less likely to absorb bacteria and is easy to clean.
Zinc Chromate wire shelving is best suited for general catering storage, dry pan racks etc. in dry, heated environments such as front of house & retail display but can rust in humid areas. Not to be used in a moist environment such as refrigeration chillers or where constantly fluctuating temperatures cause condensation which may lead to eventual corrosion. Some are epoxy coated to make them more corrosion resistant.
Nylon coated finish is excellent for damp environments. Ideal for temperatures range from -40C ~ +110C for deep freeze & wet food storage. Not for use where there is a possibility of the coating being punctured during use.
