What is Ventless Cooking Equipment?
The size of the exhaust hood or canopy is one of the biggest limitations in a commercial catering kitchen. Choosing a ventless appliance allows you to operate with a smaller hood or no hood at all.
Ventless technology is fully self-contained – using built in catalyst technology, makes it possible to operate powerful frying and grilling equipment in situations where extraction ducting is impossible. Achieved by converting grease and other volatile organic compounds into harmless carbon dioxide and water.
These innovative systems can be used in non-kitchen spaces where there is limited access to permanent hood fixtures, such as pop-up kitchens and retail/office environments or as a supplement to a more permanent kitchen for special menus etc. Ventless also provides versatility as equipment can be easily moved from one place to another to suit the user.
Ventless equipment is usually electric only. Electric powered equipment is often more energy efficient than gas, and with rising utility costs this is a major consideration.
